Coconut Chips: Healthy Sweet and Savory Snacks!
After years of slowly improving my eating habits and consciously working to make better choices, I know that eating super salty or sugary snacks leads to feeling like total crap not too long after; no one likes the jitters and sugar crash or the salt-induced bloating. Despite that knowledge and experience, however, those oh-so-bad-for-me sugary or salty treats still prove such a temptation for me (well, that and desserts, alcohol, and way too much caffeine every day, but one struggle at a time, right?).
At this point, we rarely even purchase typical packaged sweets or crackers or chips because I have essentially zero willpower (seriously, I’ll destroy an entire bag of kettle cooked potato chips in a single sitting, especially the sea salt and vinegar variety!) and find it far easier to eat well if we just don’t bring temptations home.
Of course, this leaves us needing to find or make healthier snacks options because after a while, snacking only on fresh fruit, while healthy and tasty, gets old. I mean, surely I’m not the only one that gets bored with food quickly, right? I crave new and different tastes and textures, and I like shaking it up each week in our meal plans. Now whenever I head to the grocery store, I keep an eye out for unexpected or different types of snacks, which is how I discovered Bare Natural Coconut Chip Snacks. As a total sucker for anything coconut, I clearly had to try them, so I grabbed a bag of coffee flavored chips.
With only four simple ingredients (coconut chips, cane sugar, coffee beans, and sea salt), I didn’t feel guilty about snacking on it; sure, sugar makes an appearance, and for some, I know that’s a deal-breaker. For me, though, I’m focusing on better choices overall and trying not to stress myself out with perfect choices every single time.
Whenever I get into the mentality that everything I consume must fall precisely into these rigid rules I create for myself, I find I struggle more and feel like I’ve failed whenever I eat anything even marginally outside those rules, which generally leads me to spiraling quickly and making even poorer food decisions. But I digress… I consider these coconut chips both magically delicious and healthy, though I probably shouldn’t have devoured almost the entire bag in a just a few minutes.
Seriously, I had to force myself to stop in order to make sure any survived the day and made it home to share with Cory. The only downside to these sweet and crunchy little bites of happiness? The price tag. At $5 a bag at my local grocery store, I knew I’d have to find a cheaper way to get my coffee and coconut fix, so I set about making my own!
While I honestly do love cooking, during a busy week, I gravitate more towards quick and easy recipes, and these coconut chips snacks definitely fit the bill! Whenever I make these, I like to make a few varieties, so I’ve kept the recipes at 1C each; however, if you find a favorite and want to double or triple the batch, go for it! You may need to slightly increase your second bake time; just keep an eye on the chips as you go to avoid burning.
A quick, easy, healthy snack! Eat them by the handful, add them to a trail mix, or top your favorite ice cream or breakfast bowl!
Ingredients
Scale
For All
Start with 1C Unsweetened Coconut Chips/Flakes
Mocha
2 tsp. Maple Syrup
1 ½ tsp. Ground Coffee
1 tsp. Cacao or good quality Cocoa Powder
Pinch of sea salt
Bake 5 minutes; stir, then bake another 2-3 minutes
Pumpkin Pie
3 tsp. Maple Syrup
2 tsp. Pumpkin Pie Spice
Bake 5 minutes; stir, then bake another 2-3 minutes
Red Curry
1 tsp. Coconut Oil
¾ tsp. Red Curry Paste
Bake 4 minutes; stir, then bake another 2 minutes
Yellow Curry
1 tsp. Coconut Oil
1 tsp. Curry Powder
Bake 4 minutes; stir, then bake another 2 minutes
Pineapple Lime
3 Tbsp. Pineapple Juice (or pureed pineapple)
Juice from ½ a Small Lime
Bake 6 minutes; stir, continue baking, stirring and checking every two minutes thereafter, watching closely, as they can burn quickly towards the end.
Instructions
Preheat the oven to 350 degrees
Start with 1 C Unsweetened Coconut Chips/Flakes (the larger the better)
Combine flavor ingredients and coat coconut chips/flakes
Spread coated chips evenly on a baking sheet lined with parchment paper
Bake for time listed with each flavor; stir, then bake for remaining time listed until toasted.
Watch carefully towards the end to avoid burning!
Notes
When I make these, I tend to make several flavors, but feel free to double or triple a batch of your favorites! You may need to adjust bake time(s) slightly to account for the greater quantity, but just keep an eye on the chips as you go to ensure they don’t burn!
