Chocolate Peanut Butter Cookies
Peanut butter and chocolate are an amazing combination. These two simple ingredients come together to make something truly incredible. Growing up I was (and probably still am, honestly) a Reese’s Peanut Butter Cup fanatic; they were my go-to sweet treats as a child. As I’ve gotten older I’ve employed the “We can’t have these in the house” method, since anytime we have them in the house, I have no willpower and have passed my days of being able to eat anything and everything I want.
All this to say that I’ve been thinking about healthier ways to still enjoy peanut butter and chocolate together when the craving strikes. I set out to make a chocolate peanut butter dip for apples and bananas. My first attempt failed as a dip, but Joelle (always having a knack for recipe creation) suggested that it would work better as no bake treats. I added in some mix-ins, formed them into chocolate peanut butter cookies, and had a winner!
These delicious no bake peanut butter cookies are exploding with wonderful Peanut Butter and chocolate flavor. They’re healthy, simple to make, and a great source of protein. Make a batch for desserts or for mid-morning and/or afternoon snacks. Pack them for meals on the go, take them to work or school, or eat them as a light breakfast! Or just mix them up and eat it all with a spoon (I won’t judge).
Try this recipe for healthy peanut butter chocolate no bake cookies! Packed with chocolate chips, peanuts, and old fashioned oats, this soft chewy cookie is flourless and has no refined sugar. Make a batch of these delicious easy homemade treats for snacks, desserts, or for light meals. Pack them in your lunches or send them with the kids to school! Clean, Vegan, Simple.
3/4 Cup peanut butter
1 1/2 Cup oats (use gluten free oats to make this recipe gluten free)
6 Tbsp maple syrup
3 Tbsp chopped roasted and salted peanuts
3 Tbsp chocolate chips
2 Tbsp cacao powder
1/4–1/2 tsp salt, to taste
Add all ingredients to bowl.
Stir until combined. (or mixed with hands)
Form into 1 1/2″ cookies.
If the cookies seem sticky, chill them in the fridge for 30 minutes or so. They will firm up as they chill.
