Apples and Honey Peanut Butter Dip
I absolutely adore spring; the weather finally turns warmer, pops of color start appearing as flowers bloom and trees bud, and the daylight lasts a little longer, which helps me stay productive and a tad more energetic in the evenings. Along with all those positives, though, tends to come a sense of busyness that can start to feel overwhelming… and the thing is, it’s usually good busyness: my students perform for contests and festivals and at my studio recital, we have over a dozen family and friend birthdays in March and April, which leads to lots of fun and celebration with people we love, and I usually have the opportunity to clinic, judge, and perform more regularly.
All of this is truly wonderful, and I am so grateful for all the amazing people, activities and events in my life during this season; still, on occasion, the sheer amount of time needed for all these incredible people and opportunities threatens to overwhelm me. I struggle to balance preparations, events, and time with loved ones with maintaining the habits important to me that I’m working diligently to build: eating well, getting enough sleep, and working out/staying active. Perhaps you can relate?
So at times like these, I turn towards the simplest of recipes to ensure that I don’t spend a great deal of my already limited free time making meals and snacks. In order to stay on track health-wise, we have to let simplicity reign. To that end, I almost hesitate to call this honey peanut butter dip a recipe, but honestly, it’s a staple snack in our home, and since it’s incredibly simple, delicious, healthy, and satisfying (and even satiates my relentless sweet tooth), I felt compelled to share this peanut butter dip with you today.
Since I feel the honey and peanut butter dip below creates the perfect balance between the sweet honey and rich, nutty peanut butter, it’s important to note that we always use peanut butter that has only one or two ingredients: peanuts (obviously) and sometimes sea salt. We actually use the Kirkland brand, which members can find at Costco, most often (it contains only organic peanuts and sea salt), though you can also find great options on Amazon, such as Spread The Love Peanut Butter. We also opt for raw (but still liquid) honey whenever possible in order to retain the trace minerals and nutrients found within, and if possible, we purchase local honey from a farmer’s market. Again, Amazon can hook you up as well and deliver it straight to your door; we like Honey Gardens Raw Honey personally.
Also, since simplicity remains the key to surviving the coming months of festivities and fun with our healthy habits intact, I prefer to prep snacks for the week all at once whenever possible. For years, I felt prepping apple slices ahead of time to be a fool’s errand, since they brown so quickly (and I dislike the taste of lemon or lime juice often spritzed on them to maintain their color), but then we made a fantastic discovery: ceramic knives!!
For our wedding, we received a set of fabulous Kyocera Ceramic Knives, a brand recommended by multiple food bloggers we followed and by a few cookbook authors as well, and by happenstance realized that apples do not brown nearly as quickly when cut with a ceramic knife! (Seriously, check out this site for some more info on ceramic knife awesomeness.) The apples below still looked the same several days later; it’s fantastic!
This kitchen hack has changed the way I prep, and honestly, at this point, I find myself reaching for Kyocera knives most often for our basic fruit or veggie prep. We have a couple incredible metal Shun Knives my parents gave us as well, and those still remain our go-to knives for things like meat, hard cheeses, anything frozen, and fruits or veggies with particularly hard exteriors (think pineapples and butternut squashes), but they have dulled slightly over the years (I know, I know… we just need to send them in for proper sharpening, but that’s one of those tasks that somehow always gets pushed off, you know?) where the Kyocera ceramic knives still have their keen edges. In fact, we have only 4 knives, 2 Kyoceras and 2 shuns, that we use for literally all of our cooking. They’re that good.
We haven’t tried any other ceramic brands (and no, Kyocera isn’t sponsoring this post or anything… they definitely don’t even know we exist, lol), but our research when we registered for the wedding indicated this was the brand to purchase, and after four years of almost daily use, they’re still in excellent condition and super sharp. Remember, though, if you do go the ceramic knife route, that you can’t twist or bend them or use them on certain foods (hence why we use our metal Shuns for those items listed above), and be very careful not to drop anything on the blade, as you risk breaking it. That being said, we’ve never had a problem with ours; in fact, because we make sure not to use them in a bending/twisting manner, they haven’t chipped even once (ceramic is extremely hard but consequently brittle, hence the no bend/twist motions).
Alright, I’m done gushing over our spiffy knives. On to the honey peanut butter dip recipe! Again, I hardly feel I can call this a recipe, but oftentimes, the easiest snacks are my favorites, especially in times of overpacked schedules and insufficient rest. So here you go: Apples & the Perfect Honey Peanut Butter Dip. Of course, if you want even less prep or work (or want to avoid extra sweeteners), just go for good old apples and peanut butter: easy peasy, healthy, and still super delicious. For vegans, I suspect Maple Syrup would make an excellent substitution for the honey!

- 1 C Peanut Butter
- 3 Tablespoons Liquid Honey
- Green Apples, sliced
- Add peanut butter and honey to a bowl and stir to combine.
- Serve with slices of green apples.
- If you find the dip becomes too stiff after refrigeration, just pop it in the microwave for 15-20 seconds!
