Apple Smoothie-Like Apple Pie!

I know it’s Valentine’s Day, and I had grand plans to create and share some delectable, healthy chocolate and fruit concoction, but alas, I fell ill again (seriously, when will this flu season be over?). I ended up spending the better part of five days in bed sleeping and binge watching Grimm on Amazon Prime… so you’ll just have to wait until later for that chocolatey goodness and instead enjoy this super easy, healthy, totally delicious Apple Pie Breakfast Smoothie!

As you likely know, desserts and breakfast foods constitute the best and most important food categories, which clearly makes brunch—an epic combination of breakfast, dessert, and cocktails— the perfect meal. Unfortunately, things like work and pesky everyday responsibilities interfere with my dreams of daily, laid-back brunching, so quick and easy on-the-go smoothies dominate our weekdays. Still, I don’t let that deter me from enjoying my breakfasts; instead, I use it as an opportunity to find and create delicious and healthy smoothies that still prove totally brunch-worthy!

This apple smoothie blends sweet and tart apple flavors with warm, fall spices and rich, buttery pecans for that fresh-baked apple pie flavor. Soft medjool dates lend just a hint of sweetness and light, caramel goodness. The added almond milk keeps the texture smooth and creamy, and tossing some ice in the mix just keeps things cool. While you can certainly use whatever apples you have on hand, I definitely suggest you try this with both sweeter fuji or gala apples alongside tart green granny smiths for the perfect balance in this apple smoothie!

If, like us, you find that mornings tend, at least occasionally, towards chaos, you can easily prep this smoothie the night before. Just chop and add ingredients to your blender, and leave it all covered in the fridge overnight. In fact, if your dates need some softening (or if your blender doesn’t have quite as much oomph as the high powered guys), toss the dates in the bottom of the blender overnight, and the almond milk poured on top will soak into them and help them blend more smoothly the next morning! Description

Start your day with this easy, healthy Apple Pie Breakfast Smoothie! Packed with fruit and super creamy, you’ll love this dessert for breakfast recipe. Dairy free, Vegan, Gluten Free, and tasty!


Ingredients

Scale
  • 2 small sweeter apples (fuji, gala, etc.)
  • 1 small granny smith apple
  • 1 1/2 C unsweetened plain almond milk
  • 1/4 C chopped pecans (toasted or raw)
  • 2 medjool dates, pitted
  • 1/2 tsp vanilla extract
  • 1 heaping tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • pinch sea salt
  • 4 ice cubes

Instructions

  1. Blend on high until smooth
  2. Enjoy!

Notes

  1. If the texture seems a bit grainy (usually due to larger apples), add some extra almond milk to smooth it back out!

So go ahead, enjoy your dessert in a glass for breakfast, and carry a bit of that relaxy brunchy spirit with you all day long!
