A quick, easy, healthy snack! Eat them by the handful, add them to a trail mix, or top your favorite ice cream or breakfast bowl!

For All
- Start with 1C Unsweetened Coconut Chips/Flakes
Mocha
- 2 tsp. Maple Syrup
- 1 ½ tsp. Ground Coffee
- 1 tsp. Cacao or good quality Cocoa Powder
- Pinch of sea salt
- Bake 5 minutes; stir, then bake another 2-3 minutes
Pumpkin Pie
- 3 tsp. Maple Syrup
- 2 tsp. Pumpkin Pie Spice
- Bake 5 minutes; stir, then bake another 2-3 minutes
Red Curry
- 1 tsp. Coconut Oil
- ¾ tsp. Red Curry Paste
- Bake 4 minutes; stir, then bake another 2 minutes
Yellow Curry
- 1 tsp. Coconut Oil
- 1 tsp. Curry Powder
- Bake 4 minutes; stir, then bake another 2 minutes
Pineapple Lime
- 3 Tbsp. Pineapple Juice (or pureed pineapple)
- Juice from ½ a Small Lime
- Bake 6 minutes; stir, continue baking, stirring and checking every two minutes thereafter, watching closely, as they can burn quickly towards the end.
Instructions
- Preheat the oven to 350 degrees
- Start with 1 C Unsweetened Coconut Chips/Flakes (the larger the better)
- Combine flavor ingredients and coat coconut chips/flakes
- Spread coated chips evenly on a baking sheet lined with parchment paper
- Bake for time listed with each flavor; stir, then bake for remaining time listed until toasted.
- Watch carefully towards the end to avoid burning!
Notes
- When I make these, I tend to make several flavors, but feel free to double or triple a batch of your favorites! You may need to adjust bake time(s) slightly to account for the greater quantity, but just keep an eye on the chips as you go to ensure they don’t burn!
