This chia pudding breakfast starts you off on the right foot with sooo little effort. Mix up the chia and coconut milk the night before, toss it in the fridge, and add vanilla and peaches in the morning. For the busiest of mornings, go ahead and chop the peaches beforehand as well. You can easily prep several days or a week’s worth of pudding at once, too, which makes breakfast meal prep a breeze.

My quest for a healthy smoothie version of my childhood favorite black forest ice cream custard (back when I could handle dairy) led me to my new favorite smoothie, my Black Forest Smoothie, full of chocolate cherry goodness. 

I also rarely go a week without making these quick and easy but oh so tasty Peanut Butter Chocolate Banana Breakfast Toasts. Seriously, my breakfast favorites tend to be healthy, nutrient dense dishes that still satisfy my sweet tooth. Healthy breakfast for dessert is clearly where it’s at.

This peaches and cream chia pudding is basically a simplified and healthy peaches and cream trifle for breakfast. Sweet vanilla peach magic. Seriously, you cannot beat this fresh peaches and cream recipe for an easy healthy breakfast that could absolutely pass for dessert.

I love my breakfast food WAY too much (and have far too strong a sweet tooth) to sacrifice sweet and delicious just to get healthy. Low Carb & Keto Chia Pudding- Have you been asking yourself “Is chia pudding keto?” Well, not every chia pudding recipe might be keto, but we’ve got you covered if you’re searching for a low carb breakfast option to fit your keto lifestyle.

Coconut milk keeps the fat content high for you, and chia seeds also have decent amount of good healthy fat too. Chia seeds do have some carbs, about 25g in the entire recipe (all 3-4 servings), but almost 19g of that are fiber, which makes a big difference for any diabetics considering this breakfast recipe too.

Using the stevia drops instead of maple syrup keeps the sugar content very low, making this delicious vanilla peach chia pudding recipe keto friendly. 

Peaches do, of course, have carbs, so depending on your personal dietary requirements, you might need to back off a little on the peaches to keep this peaches and cream chia pudding recipe perfect for your keto diet. A medium peach has about 15g carbs, and with four servings, that means half a peach per serving here, you’d end up with about 7.5g carbs if you use the full amount.

Still, you get to choose your carbs, and as sweet, delicious breakfasts go, this fresh peaches and cream recipe is a lower-carb choice that will make your heart happy and keep your belly full.

Paleo Chia Pudding – Yep, this overnight chia pudding is paleo too! Just fruit, seeds, coconut milk, and natural sweeteners! I know alcohol seems to be a gray area for many on paleo diets, but the amount of alcohol in the vanilla extract is incredibly small. If you’re truly concerned about that trace amount of alcohol in the 1.25 tsp per serving, you can always swap for vanilla bean instead (it’s just much pricier and more time consuming to make).

Plant Based – Another healthy lifestyle in which this fresh peaches recipe can shine! Stick with the maple syrup to keep this completely naturally sweetened, and you’re good to whip up a plant based breakfast rich and tasty enough to pass for a peach dessert recipe!

Coconut Milk 

While coconut milk is certainly high in fat, that doesn’t mean it can’t play a role in a healthy diet! Most of that fat comes in the form of medium chain fatty acids, especially the helpful lauric acid. Lauric acid converts to monolaurin in the body, which acts as an antiviral, antifungal, and antibiotic agent, meaning that coconut milk may help protect your body from disease-causing organisms! We use canned, full-fat coconut milk in this peaches and cream chia pudding recipe, but if you’re in an area where you can get your hands on (or make) fresh coconut milk, that’s even better and healthier.

Unlike flaxseeds, the body absorbs chia in its whole-food state: no grinding necessary. 

With lots of healthy omega 3 fatty acids, a good dose of fiber, calcium, and a variety of other vitamins and minerals, you can see why the chia seeds in this chia pudding breakfast will help keep you satisfied and full long after your peaches and cream breakfast has disappeared.

How to Make Peaches and Cream Chia Pudding Shine:

Quality Ingredients

Since this peaches and cream recipe has so few ingredients, the quality matters significantly here. We wanted a recipe packed with flavor, and that really comes from the coconut milk, peaches, and vanilla. 

While you can swap the full fat coconut milk for a lighter version if you’d like, we like the full fat because it provides such a rich, creamy texture to this peaches and cream breakfast parfait, making me think once again of dessert for breakfast.

Likewise, fresh, ripe peaches will give you the most satisfying flavor here. Thawed frozen peaches can work well too, but there’s nothing quite like making your peaches and cream healthy chia pudding with perfectly ripe peaches. I love this healthy summer peach recipe and look forward to peach season every year.

Vanilla and Sweetner in the Morning:

We really wanted a strong vanilla flavor here, hence the full tablespoon of extract, which we found was the right amount paired with the rich creaminess of the coconut milk. However, when we added it at night, we lost a lot of the vanilla flavor. Stick to adding your vanilla in the morning. Of course, you can always back off on the vanilla if you want a milder vanilla flavor!

We also recommend adding your sweetener right before eating in order to adjust to your preferences. If you’re trying to cut back on sweeteners, you can always start with less than the recipe suggests and add until you hit your desired sweetness level.

Other Fruits

Trade the fresh peaches for nectarines, mango, or even cherries; you’ll find the base recipe works quite well with many fruits, and these swaps make this chia pudding breakfast a recipe you can make year-round!

Other Milks

Because this is a coconut milk chia pudding, our peaches and cream chia pudding is dairy-free and vegan. We also adore the coconut milk because of the richness of flavor and luscious texture it provides. 

However, if coconut milk isn’t your thing, or you have an allergy, you can certainly trade this for other milks, dairy or otherwise. Macadamia nut milk or almond milk would work well here as substitutes. If you’d rather not use full-fat coconut milk, feel free to swap it for a lighter version as well.

No Sugar Added Peaches & Cream Chia Pudding

To make this chia pudding without any additional sweetener, just drop out the maple syrup or stevia. This change would make this quick and easy breakfast also Whole 30 compliant (just make sure to choose a compliant coconut milk). We recommend upping the fresh, ripe peaches in this case, to give your peaches and cream breakfast chia pudding a little extra whole-food, plant-based, natural sweetness!
