Avocado Toast for an Easy Healthy Breakfast
Joelle and I discovered avocado toasts for breakfast a few years ago and since then they have been a regular breakfast recipe for us. They go together fast, feature ingredients that are regularly on hand for us, and taste great. They also give us great fats and proteins to fuel us up for whatever our day entails. We’ve tried several different recipes or versions for our avocado toasts, always topping them with an egg, but it wasn’t until this spring when we tried them with sourdough bread that we truly fell in love.
This spring I got into making a sourdough bread starter and have been enjoying doing that for the most part. It took a lot of time and effort to get it started, and can be very time consuming and ingredient intensive if you’re baking regularly, but I’ve found that keeping my starter in the fridge to bake bread every couple weeks suits my schedule and is about the right frequency for me.
This recipe isn’t all about baking sourdough bread, but I will tell you truthfully that a fresh homemade sourdough bread can take your avocado toast from good to amazing. Truthfully, we didn’t think that the bread could make that big of a difference until we tried it.
If you’re already a sourdough bread maker, you’re good to go. I recommend following King Arthur Flour’s guidelines for creating a starter if you want to get into making your own sourdough starter. If you don’t want to go through creating your own starter, there are a number of places online (King Arthur’s website included) that will sell already made starters. And if bread baking isn’t your thing, look for a good sourdough bread at your grocery store or find a bakery in your city that will sell you one. This recipe can be made with other bread types but it just isn’t the same.

Homemade toasted sourdough topped with avocado, a fresh cooked egg, and loaded up with everything bagel seasoning with a kick is like breakfast perfection. It also makes a great light lunch or can be a tasty dinner, too!
Let’s Make some Sourdough Avocado Toast!
Alright, time for the best part; making the recipe. Well, let’s say 2nd best part, as eating the food is really the best part. Lightly toast your sourdough slices in the toaster. While this is happening, heat your coconut oil in a skillet over medium heat. Make sure your skillet has a lid, as the lid is a key part of cooking the perfect sunny side up egg.
Once your oil is hot, crack your eggs into the skillet. As soon as all of your eggs are in the skillet, add a small bit of water into the skillet and cover it with the lid. Let the eggs cook without disturbing them until you see a small white film form over the entirety of the egg yolk. Once this film has formed over the whole egg yolk, your eggs are done. Remove from heat, take off the lid, and use a spatula to carefully remove your eggs from the skillet.
While your eggs are cooking, mash your avocado. Cut your avocado in half and remove the pit. Using a fork, mash the avocado in the skin. Then scoop your avocado out and spread about ¼ of a large avocado on each slice of toast.
Once your eggs are cooked, place one on top of each slice of toast with the avocado on it. Top with a seasoning of your choice or your preferred hot sauce and enjoy.

While bread is toasting, heat oil in a skillet over medium heat.
Once oil is hot (you can test is by carefully flicking a little water into the skillet. If you get little pops from the oil you know the oil is ready.
Crack eggs into skillet. Add in a bit of water to the skillet and cover with a lid. Cook the eggs until the yolks form a small film over the tops of them. This will give you a perfectly cooked sunny side up egg!
While eggs are cooking, mash the avocado with a fork and spread it onto the toast, one quarter of a large avocado per piece.
Once eggs are done, place them on top of the avocado toasts. Sprinkle liberally with everything bagel with a kick seasoning.
