Did anyone else grow up with broccoli and cheese sauce as a regular side dish for meals? I’m pretty sure as a child we did the Green Giant Broccoli and Cheese Sauce all the time. Now don’t get me wrong, I loved this broccoli side dish as a child and gladly ate it whenever we had it. Looking back, though, I can only imagine what ingredients went into the cheese sauce, and so set out to make an upgraded healthier version of this.
This upgraded cheezy broccoli side dish is incredibly simple, featuring only 6 ingredients and going together in around 30 minutes. Just chop your broccoli into florets, mix up the cheezy garlic nutritional yeast mixture, and mix it into the broccoli. Roast it in the oven on a baking sheet at 425F for 25 minutes, and enjoy!
This recipe is designed for 1 pound of broccoli, but you may want to double or triple it, because it’s that good! I’m not even sure how many batches of this recipe we’ve gone through in the last few weeks and we’re still not tired of it. It’s a great broccoli side dish recipe for getting together with family and friends. You don’t even have to tell them that there’s not actually any cheese in it!

While we aren’t against cheese in any way, we find that for the most part we feel better when we are avoiding cheese and other dairy products. And we try to balance our meals out, often eating mostly meat free meals. Most of the recipes you find on Our Sweetly Spiced Life are non-dairy, and many of them are vegan. It’s a choice we’ve made because we like how we feel when we’re eating this way. This cheezy garlic roasted broccoli is flavorful and delicious, but doesn’t leave us feeling heavy or less than our best.
It’s So Simple
Another big tenet of our eating habits here is that recipes be simple. There always seems to be so much to do in any given day or week, and there never seems to be enough time to get it all done. Because of this we try to stick with quick and simple recipes. This broccoli side dish recipe features quick prep and cooks in just 25 minutes. You should be able to have the dish prepped in the time it takes to preheat your oven, and then just slide it into the oven, set a timer for 25 minutes, and wait. It’s quick, simple, and doesn’t have a lot of hands-on time.
This simple side dish goes well with chicken, fish, beef, pork, pasta, and so much more. Because it’s so easy, you can focus on making your main dish and not worry about what side will go with it.
Only 6 Ingredients!
Again, we like simplicity here at Our Sweetly Spiced Life. This vegan roasted broccoli has only 6 ingredients in it, making it so easy to put together. Other than the broccoli, these ingredients are almost always on hand in our kitchen, so we don’t have to worry about a lot of necessary ingredients to put this together. You can find these recipes at most any grocery store, so you shouldn’t have to run all over town to get what you need. We’ve liked buying a big container of roasted garlic from Costco lately, saving us the time of peeling and chopping garlic, although fresh garlic works great in this recipe as well. You should be able to find nutritional yeast in health food sections at the grocery store, or you can order nutritional yeast online.
Let’s make some Cheezy Vegan Broccoli
Alright, now to the exciting part; making this delicious roasted broccoli side dish!
Preheat your oven to 425F. Get out a large baking sheet. I’ve found that roasting this broccoli side dish right on the baking sheet gives the best results, but you can use foil or parchment for easier cleanup if you’d like. Just keep in mind it may not roast up quite the same, or you may need to adjust baking times slightly.
Wash and prep your broccoli by chopping it into bite-sized florets. The broccoli will shrink down some as it cooks. Or you could buy a bag of broccoli florets and save yourself even more time! Spread your broccoli out on the baking sheet.
Mix up your olive oil, nutritional yeast, chopped garlic, salt, and pepper in a bowl. Then mix your mixture into the broccoli right on the baking sheet. I think the easiest way to do this is to just use your hands (I wear gloves for easier cleanup).
Once the oven is ready, pop the sheet pan into the oven on a middle rack and roast for 25 minutes, or until broccoli is cooked and coated in a deliciously gooey, cheezy garlic topping.

Wash and chop broccoli into bite-sized florets. Spread out on a baking pan.
Mix together olive oil, nutritional yeast, garlic, salt, and pepper in a bowl.
Mix the olive oil nutritional yeast mix into the broccoli. I find the best way to do this is with gloves and my hands.
Place on center rack in oven. Bake 25 minutes until broccoli is done.

Store leftovers in an airtight container in the fridge and consume within 3-4 days.
Notes
I get the best results with a baking sheet with no lining, but if you want easier cleanup you can line your baking sheet with aluminum foil or parchment paper. Your baking time may need to be adjusted if you do this.
