Pineapple Berry Smoothie
Summer is a great time for fresh fruit. It’s always so exciting to wander the stalls at the local farmer’s market looking for what’s in season and the best prices. Many of the vendors offer samples to help their sales (Not that we’ve ever made a breakfast out of them…), and the fruit they grow doesn’t disappoint. Even the local grocery store offers a great selection of seasonal produce, and if you find the right sale, you can get ripe fruit bursting with flavor for next to nothing.
Our morning ritual here consists of coffee and a smoothie probably six days out of the week. Because of this, we’re constantly trying new combinations and mixes for our smoothies. The majority of them turn out spectacular (or at least decent enough to tweak next time), and we go back to them again and again. Others… well let’s just say that we’ve had a few mornings where we’ve had to make another smoothie because our concoction was only fit to be feeding the disposal. Don’t worry, we won’t be making a “10 smoothies to dump down the drain” roundup.
In this Pineapple Berry Smoothie we bring together some of our summer favorites: cherries, blueberries, and pineapple. Having fresh pineapples in the house is always a treat; you can smell when they’re ripe and ready from across the kitchen. Joelle is a cherry addict, so there are always bags of these treasures of one type or another in our fridge during cherry season, as well as Costco-sized bags of frozen cherries in the freezer. You have to stock up for when they aren’t in season, right? Fresh blueberries add more depth to this smoothie, as well as giving you some great antioxidants.
Coconut Water is a staple at our house, and we use it in many of our smoothies. It adds a touch of sweetness, so between that and the fruits, we almost never add additional sweeteners. If you like a much sweeter breakfast, feel free to add some, but we recommend you try it without first. You’ll be amazed at how much sweetness and flavor you’ll get just from the fresh fruit and coconut water.

2C chopped pineapple
1C cherries
1C blueberries
1C coconut water

Blend all ingredients together until smooth.

Notes
If using fresh pineapple, you can include the juice as well.
Fresh fruit is best here, but frozen fruit works great too!
