Let’s talk about snacks and desserts, shall we? I love them both, and as Cory and I have gradually made strides towards more healthful eating, I’ve realized the importance of having healthy snacks and desserts planned and prepared each week for us. When we’re on top of meal planning, we sit down on Sunday evenings and write out the weekly meals and any necessary prep on our menu board, which lives on a shelf in the kitchen where we regularly see it.

Planning the meals themselves has become relatively routine for us, but sometimes also planning healthy snacks AND desserts seems like so much extra work, for whatever reason. Oftentimes, we forgo the planning, telling ourselves we’ll just snack on raw fruits and veggies, which we do fairly well; still, I get bored quickly with food and crave variety in my eating, so halfway through the week, I end up wishing we had something on hand that would satisfy my snack or sweets cravings a little more thoroughly.

Enter healthy energy bites, the perfect little snack or sweet treat that works anytime of day; these come in practically endless flavor combinations (seriously, just search Pinterest for “healthy energy bite,” and you’ll see what I mean!). I love having healthy energy bites on hand because they make quick and easy on-the-go breakfasts, serve as great mid afternoon snacks that provide energy without a sugar rush/crash, and satisfy my sweet tooth without making me feel jittery or generally icky afterwards. These blueberry lemon lavender healthy energy bites pack a lot of flavor into a tiny package, and I absolutely LOVE the taste of florals (rose, lavender, violet, you name it!), making these particular healthy energy bites some of my all-time faves. If munching on flowers seems a little less your speed, feel free to dial down the lavender, letting the amazing blueberry lemon flavor really steal the show. I’ve made them both ways, and they turn out delicious every time! In fact, Cory, a staunch PB & chocolate energy bite lover, has decided he likes these even better… WHAT?!! I consider that a pretty solid win for these little guys!

I definitely recommend sticking with fresh lemon juice and zest to really ramp up the brightness, and to keep you truly in control of the sweetness/sugar and oil levels for your healthy energy bites, seek out dried blueberries with nothing added: no sugar, no oil, just blueberries. I’ll admit this was tricky for us; I couldn’t find any such thing in my grocery stores, even the health food ones nearby that we frequent. Instead, I took to the internet and stumbled up Brownwood Acres, who carries a range of fruit juice concentrates, dried fruits, and other fruit related goodies.

We ordered their unsweetened dried blueberries, and oh goodness, I’m so glad we did. These berries are sweet and delicious and perfect, needing absolutely nothing added. You can also find these same Cherry Chocolate Brownie Bites on Amazon if you prefer. I know the price might seem a little steep for a pound of fruit, but keep in mind the price of fresh blueberries, and for some perspective, I’ve made 4 or 5 batches of these blueberry lemon lavender energy bites and have snacked on them straight occasionally too, and we still have about ⅓ of the bag left (we bought a 1 lb bag).

Speaking of Amazon, that’s where I purchased the Organic Culinary Grade French Lavender I use in these bites, and I assure you, you won’t be disappointed in this lavender. It’s fragrant, lovely, and absolutely delicious! In fact, I got so hooked on this flavor combo that I’m working on a blueberry lavender lemonade (alcoholic and non!), so keep an eye out for that! 😀 (UPDATE: Here you go! Blueberry lavender lemonade as promised!) If you don’t have a mortar and pestle to grind the lavender down, you can crush the buds in a shallow bowl with the back of a spoon, or you could try using a muddler instead if you have one. Hoping it would save some time, I tossed some lavender in the little Coffee Grinder that I used to grind up the flax, but the lavender weighs so little that it just flew around at the top, never touching the blades. Oh well, grinding by hand works just fine!

Ingredients

Scale
  • 1 Cups rolled oats
  • 1/2 Cup golden flax, ground
  • 1/2 Cup almond butter
  • 1/4 Cup raw liquid honey (or agave for vegan)
  • 2 to 3 tsp crushed dried culinary grade French lavender*
  • 3 tsp lemon zest
  • 2 Tbsp lemon juice
  • 1/8 tsp sea salt
  • 1/2 Cup dried unsweetened blueberries

Instructions

  1. Comine all ingredients.
  2. Using gloves, ball into 1-inch bites.
  3. Enjoy!
  4. (Store refrigerated)

Notes

  1. *I LOVE lavender, so I use the full 3 tsp, but if you want the blueberry lemon flavors to dominate with just a hint of lavender, I recommend starting with 2 tsp!
