We’ve been trying to do more meal planning and prepping to set us up for success the last several weeks. Part of this has been a focus on simple, easy meals that go together pretty quick and aren’t overly complicated. This has been more and more of a priority as of late, as it seems like there’s always too much to do in the days and not enough time to do it.

As part of our meal prep, we’re trying out snack lunch boxes for weekday lunches. We assemble these at the beginning of the week and try to include multiple easy snacks or light lunch options in them. We can just grab these out of the fridge or pantry depending on contents, sit down, and enjoy a healthy, easy lunch. No cooking, no prepping, just an easy meal. It’s about convenience and ease, allowing us a quick lunch break and then to get back to work.

This Garlic Herb Nut Mix was one of the latest snack lunch box creations, and we couldn’t be happier with how it turned out. Wanting a savory nut mix, we turned to a no salt seasoning we had picked up at Costco. Basically a Mrs. Dash garlic and herb seasoning, it went perfectly on mixed nuts. We combined almonds, cashews, and peanuts (although lots of other nuts would work great), this garlic and herb seasoning, some olive oil, and a bit of salt together and roasted them up to perfection.

We Love this Garlic Herb Nut Mix

This nut mix recipe is so simple and so tasty. It features minimal ingredients (3 ingredients plus whatever nuts you’re using), is prepped and ready in 40 minutes or less, and makes an awesome savory snack or lunch addition. We use common, easy to find ingredients so you don’t have to go searching for stuff to make this; you can likely make this with things you already have on hand.

We made this recipe for 2 cups of nuts, but it’s so easy to scale this up for your needs. If you want to make up a big batch for a party, to give out as gifts, or just to have snack ideas on hand for the family, this garlic herb nut mix can be doubled, tripled, or scaled up for whatever needs you have.

Instructions

  1. Preheat oven to 300F
  2. Combine all ingredients in a bowl or Ziploc bag. I recommend a Ziploc for ease of mixing and cleanup
  3. Mix until combined.
  4. Spread mix out evenly on a baking sheet.
  5. Bake 25-30 minutes in the oven until nuts are toasted and fragrant. Cashews should turn a golden brown and peanuts may darken slightly in color.
  6. Remove from baking sheet to a bowl or airtight storage container and let cool.
  7. Enjoy!
