Summertime and a Pineapple Ancho Margarita
Everyone rejoice because summer is here! Well I suppose technically summer doesn’t start until June 21st, but I don’t care because school is out and I’m on break! And if you ask the weather around here, it’s been mid-July since May, other than maybe 2 days in the middle where it felt like spring.
We’ve been settling into our summer schedule (mostly) around here and have been getting some much needed housework done. Those projects that we always seem to put off until later while everything else is going on are finally getting worked on, and it’s exciting to be actually doing stuff around the house. We’ve tackled the closet and are working our way through the bedroom and into the office. Checking things off the list, yes!
The time off and the heat also create a great opportunity to enjoy delicious, refreshing cocktails while spending time with friends and family. My Pinterest board has been flooded with summery drinks, so it’s now time to try them out! Of course then I immediately crafted my own margarita instead of trying the hundreds of cocktails that have been saved away for another day. Oh, well; they aren’t going anywhere, right?
Not too long ago we, were out wandering downtown Lee’s Summit and came across a store called Libations & Company, which turned out to be a goldmine for spirits and mixers. They had barware, liquors, and more bitters than I’d ever heard of! The staff was also extremely helpful and friendly; they even let you sample some if you’d like. I came across an Ancho Reyes Chile Liqueur in there and had to get it (I am a chile head after all…). Since that day I’ve wanted to come up with a cocktail that would feature this liqueur. It goes well with a hard cider if you’re looking for a simple mix-in, but I really wanted this flavor to shine.
A Fantastic Spicy Margarita Recipe
This Pineapple Ancho Margarita makes wonderful use of the sweet heat from the chile liqueur, and pairing it with a silver tequila and pineapple juice melds into a deliciously cool summer drink. When making this cocktail, you can pour the ingredients into a Cocktail Shaker with some ice and shake it up, or you can add your ingredients into your Rocks Glass, stir it up, and then add ice to finish it off. Ingredients
Scale
4oz pineapple juice
1 oz Milagro silver tequila
1 oz Ancho Reyes ancho chile liqueur
½ tsp of liquid honey
splash of lemon juice
salt for rim
lemon slice for garnish
pineapple chunk for garnish
Instructions
Prepare two shallow dishes: one with water and one with salt.
Dip the rim of the glass into the water and then into the salt. Twist the glass in the salt a few times to get the rim fully coated.
Measure all ingredients into your glass.
Stir to combine.
Add ice.
Garnish with pineapple chunk and lemon slice.
Notes
You can also add ingredients into a cocktail shaker with ice and shake your drink to combine and chill it. Then simply pour into your glass.
