School Snacks and Sweet and Salty Trail Mix

School days as a teacher don’t allow much for down time and often require eating at odd times (and often in 20 minutes or less!). I end up planning everything around when I have these breaks during the day; restroom breaks are even based on the small bits of time I get between classes! I’ve had years where my lunch break is as early as 10:30AM and years where it’s been as late as 1:00PM. To add it all of it, it changes each year, so I’m always getting used to a new schedule.

Because of the busy schedules and odd lunch times I’m always bringing snacks with me to fuel me throughout the day. We’re constantly on the lookout for great recipes that I can eat in a hurry and that’ll survive in my desk for several days at a time. I enjoy snacking on fresh fruit, but it doesn’t last long enough to make it the best choice for days when I’m going several hours between meals.

This trail mix is a fantastic choice for on-the-go eating, fueling those long mornings or afternoons, and even for taking with you on trips. It’s great to put in lunches for your kids, for after-school treats that will tide your family over until dinner, or to take with for an epic board game day (because I know we’re not the only ones who do this!). It packs a fantastic flavor with chocolate, dried fruit, roasted nuts, and coconut coming together for the perfect blend of salty and sweet that will satisfy any craving. It couldn’t be easier to mix-up a batch; just dump the ingredients in a bowl and combine!

Trail Mix Ingredients:

¾ C Dried Cranberries

¾ C Golden Raisins

⅔ C Coconut Chips, unsweetened

1C Unsalted, Roasted Cashews

1C Salted, Roasted Peanuts

⅔ C Chocolate Chips

Ingredients

Scale
  • ¾ C Dried Cranberries
  • ¾ C Golden Raisins
  • C Coconut Flakes, unsweetened
  • 1C Unsalted, Roasted Cashews
  • 1C Salted, Roasted Peanuts
  • C Chocolate Chips (*ensure non-dairy for vegan; we use Lily’s Chocolate Chips – bonus, they’re low carb!)

Instructions

  1. Mix all ingredients in a bowl.
  2. Enjoy!
