This apple cinnamon oatmeal makes a perfect healthy breakfast recipe! Loaded up with delicious cinnamon and apple flavor, this easy vegan one pot breakfast oatmeal recipe comes together fast and tastes incredible! Enjoy a delectable morning meal without all the hassle!


  • 1 Large red apple (we recommend gala or fuji)
  • 2 ½ Cups water
  • 1 Tbsp cinnamon
  • 1 Cup rolled oats
  • Pinch of salt
  • 1 ½ Tbsp maple syrup, plus more optionally for serving
  • ½ tsp vanilla extract
  • Almond milk, optional, for serving
  • Cinnamon and sugar, optional, for serving


  1. Add water to a medium saucepan and bring to a boil.
  2. Finely chop your apple and add to water, along with ½ Tbsp of the cinnamon
  3. Bring the saucepan to boil. Cook at low boil for 5 minutes.
  4. Add in oats, rest of cinnamon, and salt to the saucepan. Cook at a low simmer for 15-18 minutes, stirring occasionally, until water is absorbed and oats are done.
  5. Remove from heat. Mix in maple syrup and vanilla extract.
  6. Serve in bowls, topping with more maple syrup, a splash of almond milk, and/or cinnamon and sugar, if desired.


Store rest in an airtight container in the fridge and consume within a few days.
