My favorites were always the peaches and cream flavor and the apple cinnamon oatmeal. I’m pretty sure I’d eat multiple packets of oatmeal for breakfast regularly.
Well as I’ve grown up I still enjoy oatmeal but as with a lot of other things from my childhood, I’ve looked to upgrade these cravings to healthier versions. This vegan apple cinnamon oatmeal recipe is loaded up with delicious apple and cinnamon flavor in an easy, one-pot breakfast meal that is ready in under 30 minutes. It might not be as fast as the instant oatmeal packets, but I promise you’ll agree that the time is worth it when you take your first bite. And with natural ingredients and sweetened with maple syrup, it’s a sweet breakfast that will fuel you up for your day and leave you feeling energized.

I love how much you can personalize your bowl of this apple cinnamon oatmeal to meet your tastes. Joelle tends to like things a lot sweeter than I do, so she can add some extra maple syrup and/or cinnamon and sugar to her bowl to make it perfect for her. I don’t like things as sweet personally so I add a splash of almond milk and just a small sprinkle of cinnamon sugar and it’s right where I like it. Make it as sweet or not sweet as you want! If you like your oatmeal creamier, mix in some almond milk at the end. If you prefer your thicker, then just serve it as is! It’s so simple to make up your pot of oatmeal and then to allow each person to make their perfect bowl for breakfast.
Let’s make some Vegan Apple Cinnamon Oatmeal!
Alright, let’s get started making us a delicious breakfast! I recommend getting all of your ingredients out and at your work space from the beginning, so you can really focus on just making the recipe. Get yourself a cutting board, a knife, and a saucepan or pot to cook your oatmeal in.
Add water to the saucepan and bring to a boil. Wash and finely chop your apple. As soon as the apple is chopped, add it to the water in the pan. Mix in ½ Tbsp of cinnamon. Let the mixture come to a boil and then simmer for 5 minutes.
After your 5 minutes, add in the rest of the cinnamon, your rolled oats, and your pinch of salt. Simmer for another 15-18 minutes, stirring occasionally, until the water is absorbed and the oats are fully cooked. Remove from heat, stir in your maple syrup and vanilla extract, and serve.
Make sure to have almond milk, extra maple syrup, and/or cinnamon and sugar on hand to top your oatmeal as desired. Or just enjoy the apple cinnamon oatmeal as is! I love that it tastes great right out of the pan, but can also be personalized based on how I’m feeling or for each person’s preferences.
Store any leftovers in an airtight container in the fridge and consume within a few days for best results.
If reheating leftover oatmeal, you may need to mix in a little more water or almond milk to bring it back to your desired consistency.

Ingredients
Scale
1 Large red apple (we recommend gala or fuji)
2 ½ Cups water
1 Tbsp cinnamon
1 Cup rolled oats
Pinch of salt
1 ½ Tbspmaple syrup, plus more optionally for serving
Add water to a medium saucepan and bring to a boil.
Finely chop your apple and add to water, along with ½ Tbsp of the cinnamon
Bring the saucepan to boil. Cook at low boil for 5 minutes.
Add in oats, rest of cinnamon, and salt to the saucepan. Cook at a low simmer for 15-18 minutes, stirring occasionally, until water is absorbed and oats are done.
Remove from heat. Mix in maple syrup and vanilla extract.
Serve in bowls, topping with more maple syrup, a splash of almond milk, and/or cinnamon and sugar, if desired.
Notes
Store rest in an airtight container in the fridge and consume within a few days.
