This particular recipe inspiration comes from the Hawaiian Fried Rice entree at a local Thai place ,and while I always enjoyed it, every time I’d wish for more toppings (I mean, can you ever really have too much pineapple?). Now, I can add extra pineapple, tomatoes, and raisins, toss in some green onions and bell peppers, and make sure the cashews get nice and toasted, all in less time than it would take to grab the actual takeout!

Growing up beets never appealed to me; it wasn’t until I was older that I discovered roasted beets, and I immediately fell in love with these gems. They require minimal hands-on time, no fancy ingredients, and comes out tasting amazing. Goat cheese is a perfect match in this dish, offering a nice tanginess to compliment the earthiness and richness of the roasted beets. Glazed pecans add some sweetness and spice to the dish, as well as making it a bit heartier.
