Despite the fact that the first true day of autumn still lies a couple weeks away, the shift in seasons is already palpable. Well, anyway, I found lychees at Sprouts recently, and immediately needed them. I love ice cream, but since dairy doesn’t love me back, I go for the almond/cashew/coconut milk based varieties instead to make my own.

With all the spontaneous get-togethers that accompany these warm months and the longer days, I have to be able to whip up a quick side or appetizer, and guacamole is pretty much my dish.
