Despite the fact that the first true day of autumn still lies a couple weeks away, the shift in seasons is already palpable. The morning air feels crisp and cool, carrying that unmistakable scent of fall on the stirring breeze; Labor Day Weekend festivities have ended, and school is back in session, bringing with it, at least of us, the first colds of the season.

While I adore fall (it’s my favorite season) and am absolutely ready for sweaters, hot cider, and pumpkin spice or apple cinnamon flavored everything, I’m not quite ready to let go of summer just yet. I’d like one more lazy, warm day at home with Cory and the cats, sitting outside on the deck working on the blog or just reading a good book, but since time moves only forward, I’ll instead make one more delicious, luscious summer pina colada smoothie to bid farewell to the season of warmth and sunshine.

This smoothie harkens back to the Ethnic Enrichment festival in KC that Cory and I attend almost every year in August. Thousands of people fill Swope Park to watch musical performances and dances heralding from around the world, all the while devouring the seemingly endless selections of food and drink from the brightly colored country booths encircling the park. With so many cuisines from which to choose, we can never sample something from each country, so every year, we try new foods and drink.

This year, I kept seeing people wandering about with a pineapple filled with slushy goodness, and I simply had to have one. We found them at the Laos booth, and they basically cored a pineapple and blended up the fruit with something deliciously coconutty. It was magical—bright, tropical, and perfect for cooling down on a blazingly hot summer day.

So to bid adieu to summer, I’m making my own version but with a little twist. The added mango gives this smoothie a little extra tropical kick, and the coconut milk keeps it smooth and rich. If mango isn’t your fave or you’d just like to go all-out pineapple and coconut bliss, simply substitute the mango for additional pineapple for the perfect pina colada smoothie! It’s delicious both ways and the perfect morning drink for me to part ways with this glorious summer and ready myself for all the wonderful flavors of fall.

While you can absolutely make this with frozen fruits (it’s still delicious!), I find the best smoothies… well really the best recipes of any sort, involve the freshest, ripest of ingredients, so it’s finally time to use the pineapple and mangoes that have been ripening on my counter this week!three mango pina colada smoothies in mason jars with pineapple slices

Start by chopping off the top of the pineapple and coring it; if you don’t have one of these nifty little gadgets, I highly recommend a stainless steel Pineapple Corer. We’ve tried the plastic versions in the past, and while less expensive, they’re also far less durable. The little plastic “wedge” tool that comes with many versions has never really impressed me (a knife works so much better), but otherwise, I love our corer! Now, if you intend to serve the smoothie in the pineapple itself, make sure not to go all the way through the fruit with the corer, and keep a few slices of pineapple intact to add to the top of the drink!

If you’re going to serve it in a glass, however, I recommend not only coring the pineapple but also cutting the outer portions apart and removing any additional fruit carefully with a sharp knife. Depending on your corer and the size of the pineapple, you may be able to get another ½-1 C of pineapple this way! Also, be ready to catch the juices in your blender as you remove the cored pineapple!

Next, prep your mango, carefully using a sharp paring knife to remove the peel, then slicing to each side of the pit in the center of the fruit. Now, if you’re using a high powered blender, like the Vitamix, which I adore and use at least once each day, you don’t need to chop the pineapple or the mango, except perhaps to measure if you’re worried about accurate amounts. However, less powerful blenders may work better if you chop the fruit first. Toss the fruits and Coconut Milk in the blender and blend until smooth; then blend up a few ice cubes to cool it down for serving! Ahhh, delicious, summery goodness in a glass (or pineapple, if you’re fancy!).

  • 1 1/2 C Pineapple
  • 1 1/2 C Mango
  • 1 can coconut milk
  • 6 ice cubes

Instructions

  1. Chop fruit if needed.
  2. Add ingredients to blender. Blend until smooth.
  3. Enjoy!
